Food Services

CEC operates quality in-house Food Services successfully serving over 10,000 offenders daily at 38 locations nationwide. In Pennsylvania and New Jersey alone, CEC facilities serve almost four million meals per year. The company maintains a complete food services operation which includes purchase, storage, distribution and production. The Food Services group takes great pride in its superior operation and is well documented for its high standards regarding kitchen sanitation. CEC has achieved accreditation from the American Correctional Association (ACA) and National Commission on Correctional Health Care (NCCHC) for its facility kitchens.

Food Services are actively involved in ServSafe®, a nationally recognized program that teaches and certifies individuals in basic food safety practices for preparing and serving food. All senior management of the department are certified ServSafe®, instructors, and are able to conduct classes for residents and inmates. Residents have the opportunity after training to become certified by ServSafe®, and increase their chances of employment upon release. In 2015, approximately 200 residents became ServSafe®, certified. The ServSafe®, program is mandatory for all facility kitchen managers.

Strict standards for kitchen sanitation and maintenance are determined by the National Director of Food Services. All activity is closely monitored by a specialized computer program and standards are enforced by all managers. Standards are enforced through monitoring and interaction with kitchen staff.

Food Services senior management have a minimum of thirty years experience in various areas of the food industry. The department employs a full-time Registered Dietitian Nutritionist who works closely with the food service and medical staffs whose responsibility includes nutritional analysis of all menus written by the food service team.
